For thousands of years this was the main thoroughfare for trade and expansion for the great civilisations of Southern Europe, North Africa and the Levant, with waves of culinary traditions absorbed by local populations over the centuries.
Whilst the dishes may be known by different names, Mediterranean cooking around the region typically includes seasonal local vegetables, traditional grains and legumes, fresh seafood, grilled meats and liberal use of olive oil, making it one of the healthiest cuisines in the world.
